Hey, guys! I’m back here today with some quick and light lunch ideas that are both low-carb and low-fat.
This is basically all I’ve been eating the past couple of weeks, so I decided to share them with you all.
Before we start, I want to talk about my diet/fitness this past 3 weeks.
I’ve been on this low-fat, low-carb diet (I also cut out red meat), and it’s actually been working! Most diets I’ve tried haven’t done anything, which always makes me go back to my bad eating habits. People have said that I look like I’ve lost a lot of weight, which I guess is right because my skinny jeans aren’t really all that skinny anymore.
I’ve also been combing this with some exercise throughout the day, and just being more active in general, and it’s been making me feel GREAT!
Now that I’ve talked about that, we can move on to the actual lunch ideas.
I first had these at the Cheesecake Factory, and absolutely adored them, and later decided to go and make them at home with a bit of my own twist.
They’re quite filling, and taste delicious! I make about 3-6 depending on how hungry I am that day.
I found this recipe online which is quite close to what I make, so give it a try! The ingredients are easy to find and the tacos are so worth it!
(I couldn’t find a recipe online that was similar to what I made. Just get some big lettuce leafs and wrap some kidney beans, salsa, grilled chicken, avocado, and corn inside of it. It’s pretty simple.)
Zucchini Chicken Poppers
When I found this recipe on [insert name here] I absolutely freaked out, because they look like little chicken nuggets.
I made these the same day, and let me tell you something. My family loves these! I didn’t even get to eat the first batch because it was gone by the time I sat down. They were that good.
This can be low fat and carb if you make the right filling.
I used the recipe listed below, but cut out the bread crumbs, used half the amount of cheese she used and replaces it with light/low-fat cheese instead.
They were absolutely amazing, but I wouldn’t recommend you beat these every day because of the cheese. These were great for a semi cheat day.
I love every kind of frittata out there. They’re super easy and quick to make, but still taste awesome (I feel like I’m saying that for all of these, but I’m not joking, you can make most of these in 10-15 minutes).
I used to make these with potatoes instead of spinach, but since this whole post is for low carb and fat lunches, I couldn’t really put that in here.
Firtatas seem like a breakfast food, but you can totally have them for lunch.
I recommend you don’t make this HUGE one. Maybe make half or share it with someone.
